Day 14: What To Do With All That Zucchini?

Although our garden has yet to produce a mass amount of zucchini this season, I'm preparing now for what is to come. If you're anything like my family, again, you've planted one too many zucchini plants, afraid that one wouldn't produce. Really, what would a garden be without zucchini?
Did you know that Zucchini is low in saturated fat, cholesterol and sodium and a great source of fiber? All the more reason to implement zucchini dishes into your meal plans.
With a plentiful harvest on the horizon, and one giant gifted zucchini on my counter, finding delicious recipes was a must (and a pleasure). Here's a handful worthy of sharing:
